Keep them from knowing the knowledge of what the color Blue is by keeping them in an isolated underground lab for like 20 years.

Keep them educated about the outside world, everything there is to know, let them be well socialized and stuff, etc. but never let them know about the color Blue. Once they think that this is it, this is life, and they know everything, tell them about the color blue. A color they’ve never seen before.

Record their reactions as they see the color blue for the first time.
